Extra virgin olive oil is an essential part of the Mediterranean diet. The
health benefits of olive oil have been proven through numerous studies, and
nearly everything it touches will taste better.
Even though humankind has grown olives and crushed them down into oil for

The good news is that people aren't afraid of bitter tastes like they used
to. In other categories like coffee, chocolates, and beer bitter flavors have
been getting more and more popular, and associated with well-crafted
products.
Keep it in good condition.
Extra virgin olive oil begins to decrease in quality from when it is made.
The shelf-life is dramatically affected due to exposure to heat, light and air.

first time you've been behind the wheel.
Look for the harvest date or bottling date on each bottle you buy the more
recent the date, the better. If you can only find an "best by" date, it should
be at least one year from the future.
It should be kept tightly sealed in a dark, cool cabinet. Once you open the
bottle (or the tin) make sure to take it out within a month or two.
